Genevieve’s Late Summer Fruit Jam
We are fortunate enough to have an old, rambling garden with a number of fruit trees that generally end up shedding fruit as windfalls in the late summer getting on towards autumn.
Most years, we can never be bothered collecting the fruit because it’s just too much trouble to do anything with it. That’s when I came up with this really quick and very easy recipe for what I call my Late Summer Fruit Jam.
You can use almost any kind of fruit windfall or not. If you’re not lucky enough to have a garden or an allotment then just go to the market or the supermarket and buy some cheap fruit – whatever happens to be in season.
The one thing to remember when you are making jam or jelly of any kind is always use very fresh fruit and never use fruit that is mouldy or damaged. Also please remember that when you make jam it is unbelievably hot and can cause severe burns if you spill it. Please make sure you have the pan well out of the reach of children and never make jam with small children around you. It is also advisable to make jam in a proper jam pan or very large pan as when the fruit and sugar are added together and at boiling point, the liquid more than doubles in size.
