Spicy Tomato Soup
Tomato soup is the most delicious soup for a rainy winters morning, slightly warming, not hot, and totally delicious with some home made crusty bread.
Ingredients
- 4-5 slices smoked back bacon
- 1 large onion
- 2 potatoes
- 2 tins of chopped tomatoes
- olive oil
- 1 jar Loyd Grossman puttanesca sauce
- 3 stock jellies
- single cream
Add about a teaspoon full of the olive oil to a pan and then roughly chop the onion and the bacon and add them to the pan. Gently fry them until the onions are soft and the bacon cooked.
Turn the head down and add the two tins of chopped tomatoes and a pint of water to the pan. Peel and chop both potatoes and add them to the pan.
Add the jar of puttanesca sauce and the three stock jellies to the pan. Stir and leave to simmer for about 20 min until the potatoes are soft.
Blend with a hand blender and add single cream to thin the soup a little.

I made this while I was at home during lockdown. It was brilliantly easy, and so quick to make. I really enjoyed the spicy element to it. I don’t tolerate spicy food very well, but this was delicious!
