Parmesan Crust Cauliflower
This is a delicious accompaniment to a barbeque or as a vegetarian option brightening up the humble cauliflower. It is so easy to do and just so tasty it will be a hit whenever you make it.
Ingredients
- 1 good sized cauliflower
- Olive oil
- Finely grated Parmesan cheese
What you need is a good size white fresh cauliflower.
Take all the green leaves off and rinse under a tap and pat dry with kitchen paper.
Put the cauliflower in an ovenproof dish and then mix up about 3 to 5 tablespoons of oil in a small dish and add finely grated Parmesan cheese or any hard Italian cheese and mix into a smooth paste.
Add more oil or Parmesan until you have a smooth paste. Smear the paste over the top of the cauliflower and all round the sides. Make sure the paste isn’t too liquid, it needs to stick to the cauliflower without running off, mix up more if you haven’t enough to cover it.
Put aluminium foil over the whole dish and bake in a pre- heated fan oven at about 150 degrees C for around twenty minutes to an hour. It’s best to test the cauliflower by sticking a skewer through the middle, if it slides in with little resistance the cauliflower is ready.
Take the foil off and put back in the oven for about 5 minutes until golden and crusty.
Serve whole on a dish and enjoy.
