Prawn Puffs
These little Prawn Puffs are super as canapes or as a lovely light lunch with a dressed salad.
- A couple of handfuls of washed shrimp
- 2 eggs
- Double Cream
- Tobasco Sauce
- Tomato Ketchup
- Parmesan Cheese
- Shop bought filo pastry
Begin by taking a square of filo pastry and cutting into quarters. Place two of the quarters in a muffin tin so that the muffin tin is lined and the peaks of the squares are poking out.
Into the filo pastry ‘nest’ add about half way up, the prawns with a little splash of Tobasco Sauce. Then beat the eggs into a jug, add two tablespoons of double cream and two teaspoons of Parmesan Cheese. Salt and pepper and a teaspoon of tomato ketchup.
Whisk it all lightly together and pour into your filo nest until almost at the top. When cooked this will rise. Repeat with a few more, this amount of mixture should fill about 4 or 5 cases. Put in a medium oven about 130 degrees until the pastry is golden brown and the filling is set. Put on a cooling rack to cool or serve hot.
These are also great as a breakfast snack, just replace the prawns with chopped cooked bacon.
