Scrambled Egg with Smoked Salmon on toast.

Scrambled egg is something that is so easy to go wrong, in my opinion there is nothing worse that a congealed lump of scrambled egg on a plate. I have stayed in hotels where they actually slice the scrambled egg…revolting! To make lovely creamy scrambled egg takes a little patience and some timing.

Start with gently beating two eggs (I would suggest 2 eggs per person you can put all the eggs in a bowl and do it at the same time if you are making scrambled eggs for more than yourself) add salt and pepper. Pre heat your frying pan on a gentle heat and squirt some Fry Lite or similar low calorie oil into the pan. Put the bread in the toaster at this point. Put the eggs in the pan and start stirring with a wooden spoon or plastic spatula. When the eggs are starting to cook remove the pan from the heat and keep stirring once the eggs have stopped cooking return to the heat and keep stirring lifting the pan off the heat if the eggs are cooking too quickly. Once the eggs are a creamy consistency and cooked put the toast on a plate and spoon the egg on top. Chop up some smoked salmon into cubes and place on the egg and eat immediately. I find by chopping the smoked salmon it’s easier to eat as you don’t end up with a huge lump of salmon. This is a low fat recipe and great for a special breakfast, lunch or quick tasty dinner.

Garnish with some freshly ground pepper.
