Lemon Sugar Biscuits
Lemon sugar biscuits are simple and very yummy. I’ve pressed my cookie dough into a mould which gives the lovely square shape and the pretty pattern but you can just as easily roll into little balls and press onto a baking tray.
Ingredients;
- 9 oz Plain Flout
- 3 oz caster sugar
- 6 oz slightly salted butter (you can use unsalted if you wish)
- A good quality Lemon Essence.
Heat the oven to 160 degrees. Mix the flour and the sugar into a bowl or in a mixer bowl rub in or add the butter add 1/4 teaspoon of lemon essence. When mixed to a soft dough, put on a floured board knead a bit and then press into a mould or roll into balls and flatten until cookie shaped and about 1/2 inch thick. Decorate the edges if you have made cookies and then prick the tops with a fork. Place on a baking tray or put the mould in the oven for about 30 minutes or until golden brown. When cooked put on a cooling rack and dust with caster sugar. If you have put the biscuits in a mould, turn out onto a baking tray cut into sections while hot and dust with caster sugar.
