Macaroon Bars
Being Scottish, one of my childhood delights was eating a macaroon bar. If you have never eaten one you are really missing something delicious. You would never believe that something so sweet and yummy is based on mashed potato! So, if you have some young or old ones with a sweet tooth, just save some mashed potato and I’ll show you how to make Scottish macaroon bars.
Ingredients
- 115g of potato, boiled and mashed.
- 450g of icing sugar (powdered sugar in the USA)
- Milk or plain if you prefer cooking chocolate
- desiccated coconut, browned to a golden colour under the grill.
Take your cooled mashed potato and slowly add the icing sugar until you have a stiff mixture.
Press the mixture into a swiss roll tin so that it’s about 1 inch thick.
Brush thickly with melted chocolate and sprinkle with the browned coconut.
Cut into slices or small bite sized bits and leave to cool. Once the chocolate is hardened lift the slices out and turn over repeating the process of brushing with the melted chocolate and dusting with the browned coconut.
You can also cut the potato mixture into bite sized pieces and just dip them in chocolate using toothpicks to hold in place and stop your hands from getting covered in chocolate.
