Slimming Breakfast Quiches

This is a super recipe if you are on a diet. If, like me, you prefer a savoury breakfast and can’t stand porridge these little quiches are super. You can heat them in the morning or have them cold in a packed lunch or picnic.
- Half a small tub of cubed feta cheese
- One small finely chopped red pepper
- 6 chopped medium mushrooms.
- 4 small pre cooked new potatoes chopped into small cubes
- 2 rashers of lean smoked back bacon chopped into cubes.
- 3 spring onions finely sliced.
- 5 beaten eggs
- tablespoon of quark (or cream if you are lucky enough not to be on a diet) Also if you wish a handful of grated mature cheddar.
Start by very gently frying the red pepper, potatoes, mushroom, bacon and spring onions using a few sprays of 1 calorie olive oil until soft and the bacon cooked. Remove from the heat. Put the eggs in a bowl and gently whisk and add the quark or cream and season with salt and pepper.

Spray some small quiche tins or a muffin tin with some 1 calorie oil.
Put about 6 feta cubes into the bottom of the muffin tin.

Spoon in the gently fried vegetables into the muffin tins and then add the egg mixture till the vegetables are covered. If you wish put a little grated cheese on the top and put in the oven at 160 degrees C and cook until firm and golden.

Eat hot or put on a cooling rack and refrigerate for use later. They can be eaten hot or cold.
